It's pretty simple actually. Well once you get the hang of it. Do you have the required applications? ROM flasher (forget it's name but I think it was CustomRUU), rom file, etc...

Just saw that website a couple minutes ago lol. But yeah that website helps. Yes, there is ALWAYS and I mean ALWAYS a chance of bricking your phone when you flash. But according to me, that's only if you screw up or do something stupid. I have bricked a phone once, but it got fixed by reinstalling the new rom.

I'm just really worried about doing this because if a screw up then "wow there goes the 700 bucks that i paid for"

But can I live without the cooked rom?

You will get another Diamond, a lot faster and some rubbish that you don't need is gone.
If you follow the instructions you're kind of safe, but as suggested earlier, if you misbehave
you might have got yourself a brick.

Depends on how bad you screw up. If you for example it stops in the middle of flashing a new rom, don't worry. You can reflash and it should work. If you screw up bad and can't access anything in order to flash the rom once again, then you're screwed and will have to exchange in warranty saying that it won't go past bootloader. You tell them you tried to flash a new rom and you're screwed. NEVER, I repeat, NEVER tell them you tried to flash a new rom. They will say you f'd up and it's your fault so that would waste your $700.
